It has a slightly fatty but crumbly and granular texture, drier compared to Parmigiano Reggiano "Mountain Product" aged 24 months and its traditional counterpart. In taste, it presents various and moderately complex aromas, hints of grass, nuts, and spices. An authentic, strong taste, which adds to its high digestibility.
